SWEET ACORN SQUASH

2 medium acorn squash
1/2 tsp. salt
3/4 cup maple syrup
2 tbs. butter or margarine, melted
1/3 cup chopped pecans (optional)
1. Pre-heat oven to 350 F.  Wash squash (and peel if desired. Jeffrey doesn’t like the skin).  Cut in half lengthwise; discard seeds and membrane.  Cut each half into 1/2 inch slices; discard the ends.  Place slices in a parchment lined baking dish (or greased). Sprinkle with salt.
2. Combine syrup and butter; pour over squash. Sprinkle with pecans (optional).  Cover and bake for 40 – 45 minutes or until tender.
