Sweet and Spicy Chicken Stir-Fry
1 onion, chopped
3 large garlic cloves, minced
2 chicken breasts, thinly sliced
3 tbs. honey
3 tbs. soy sauce
juice of 1 lime
1/4 tsp. chipotle powder
1/4 tsp. red pepper flakes
freshly ground pepper, to taste
1/2 cup white wine
1 tbs. corn starch
chili sauce, to taste
cashews, chopped (optional)
1. Heat a small amount of olive oil in a medium saucepan over medium-high heat; saute onion and garlic until tender (5 – 10 minutes). Add chicken and cook until browned.
2. Add honey, soy sauce, lime juice, chipotle powder, red pepper flakes, and ground pepper to taste. Bring to a boil, then reduce heat and simmer until chicken is cooked through and juices run clear (about 8 – 10 minutes).
3. Add white wine and return to a simmer. In a small bowl combine corn starch with 1/4 cup COLD water, then add to pan, stirring constantly. Cook until sauce thickens, then add chili sauce to taste. Serve over rice and top with cashews
