1/2 onion, diced
3 – 4 garlic cloves, minced
2 cans black beans, drained (reserve liquid)
1 cup sour cream
1 packet taco seasoning (if you want my home made stuff, send me an email!)
1/2 – 3/4 cup salsa
1 small can green chilis
2 large tomatoes, chopped
1 – 2 cups cheddar cheese, shredded
1. Heat oil in medium size saucepan. Saute onion and garlic until translucent and tender. Add most of the beans (reserving the others), and heat. Once warm, lightly mash with potato masher – just enough to break beans slightly. Add reserved beans. If the mixture seems to be too dry, add some of the reserved liquid.
2. Preheat oven to 350º F. Spread beans in bottom of a 9″ x 9″ baking pan.
3. Mix together sour cream and taco seasoning. Spread over beans. Layer remaining ingredients in individual layers: salsa, chiles, tomatoes, and cheese.
5. Bake for 45 minutes. Remove from oven, and allow to cool for 15 minutes before serving.
