2 cups garbanzo beans, drained (reserve juices)
1/3 cup tahini
4 cloves garlic
1 tsp. cumin
1 tbs. olive oil
Juice of one lemon
1 tsp. salt
1. Combine all ingredients except for the salt in a food processor or blender (an immersion blender works too). Blend until smooth. This gets very thick, and at times my immersion blender has to work pretty hard. If the consistency is too thick, add some liquid from the garbanzo beans, 1 tablespoon at a time, but be careful, because you don’t want it too thin!
Add salt to taste.
2. If desired, drizzle with olive oil and sprinkle with paprika before serving. Serve with warm pita.
NOTE: For variation, try adding red peppers, sun-dried tomatoes, pine nuts, roasted garlic, or crushed red pepper flakes (if you like some kick – only about a teaspoon will do)
